Water System
- Number of sinks ( you are require to have enough water to supply them)
- Water tank size, placement and capacity ( the volume of water available can affect your operation hours)
- Hook type and placement ( these will be a part of your health inspection)
- Material choices ( durability and freeze tolerance)
Electrical System
- Generator ( capacity and running volume)
- Shore power hook-up and placement
- Overall capacity and draw ( can it handle it's load)
- Breaker box and outlet placement ( are they in dangerous areas)
Hood vent and fire suppression
- Is all the equipment under the hood?
- Does it have fire suppression installed? ( can be up to 6K cost)
- Is it tagged/ approved?
- Is the hood NSF certified with a grease rated exhaust?
Appliances
- Is it commercial grade?
- Do they work properly?
- Is it attached to the truck?
- Is it damaged?
Vehicle
- overall condition (miles, maintenance, tire)
- Structure (roof, walls, flooring, window)
- Title and registration
- Lights and signals
